Vinification: Pressing and fermentation in steel at controlled temperatures below 25 ' C with maceration . After the fermentation, the wine is put in Barrique for 18 months.
Medium ageing: 6 months in bottle
Colour: Intense ruby red tending to purple
Flavourings: It has spicy and fruity scents, such as black pepper,
currants and blackberries. Typical of these geographical areas'
native grapes are wild herbs flavours , (like fennel and mint)
Taste: It is sweet and moderately velvety on the palate. Although
it has been softened by wood, it is austere, strong and with a
decent tannic note.
Pairings: It can be paired with sheepmeat roast and chili
